APPOINTMENT

Paul Peddle has been appointed Director of Food & Beverage at the Marriott Marquis Houston.
In his new role, he will oversee the hotel’s five dining outlets, including Xochi by James Beard Award-winning Chef Hugo Ortega and Biggio’s, the sports bar owned by MLB legend Craig Biggio. Peddle will also be responsible for leading the hotel’s comprehensive meetings and events culinary program, which spans 52 banquet facilities across the 1,000-room property.

Peddle joins the Marriott Marquis Houston with more than two decades of hospitality leadership experience. He most recently served as Director of Food & Beverage at Four Seasons Hotel Houston, where he managed multiple dining venues, in-room dining operations, pool programming, and banquet services. During his tenure, he supported beverage revenue growth, introduced new menu concepts, and contributed to initiatives in menu optimization, beverage program development, and event activations. His work also involved enhancing forecasting, labor planning, and overall operational efficiency.
Originally from Newfoundland, Canada, Peddle has built his career around culinary operations, beverage strategy, and guest engagement. He has contributed to developing talent through culinary training programs, event-led activations, and people-focused leadership frameworks. His efforts have supported improved team retention, engagement, and succession planning.

With his appointment at Marriott Marquis Houston, Peddle will focus on strengthening the hotel’s food and beverage offerings while continuing to support operational and team development across the department.
