APPOINTMENT
Malai Marke USA has appointed Chef Himanshu Joshi as Sous Chef, strengthening its culinary team with his experience across premium Indian restaurants in India and the United States.

Chef Joshi is currently associated with Dilli 32 at The Leela Ambience, where he serves as Sous Chef, contributing to North Indian cuisine rooted in traditional recipes and classical techniques.
Earlier, he worked under Chef Manish Mehrotra at Indian Accent in New York and New Delhi as Chef de Partie, gaining experience in contemporary Indian cuisine and structured kitchen operations. He also served as Junior Sous Chef at Riga Foods under Chef Ritu Dalmia, expanding his exposure to Indian and European culinary approaches.
His professional background includes roles at The Lalit New Delhi (Baluchi Restaurant), India Habitat Centre, Pan India Food Solutions Pvt. Ltd., and Nirula’s Hotels, building experience across luxury dining, catering and high-volume operations.
Chef Joshi has received a Merit Certificate at the AAHAR Competition (Pragati Maidan, 2015) and earned a Mistry Audit Certification with a 99% score, reflecting his focus on quality and hygiene standards.
In his new role at Malai Marke USA, he is expected to support menu development and operational consistency while contributing to the restaurant’s Indian culinary offerings for its international clientele.
