Anantara Chiang Mai Resort Introduces the Colonial Dining Experience at 1921 House
Anantara Chiang Mai Resort has introduced the Colonial Dining Experience, a seven-course chef’s table concept set in the historic 1921 House. The experience draws on the cultural exchanges that shaped Chiang Mai in the early 20th century, when the building served as the British Consulate.
Built more than a century ago, the 1921 House reflects Chiang Mai’s role as a crossroads of Lanna heritage and British influence. Today, its teak interiors and river-facing verandahs provide the backdrop for a dining journey that explores this shared history through food, storytelling, and contemporary culinary techniques.

Rooted in the 1920s, a period marked by diplomacy and international exchange, the Colonial Dining Experience presents a modern interpretation of the building’s past. Each course represents a point of cultural dialogue, combining northern Thai ingredients with international influences and refined preparation methods.

The menu opens with tea-smoked Scottish lobster glazed with tamarind and finished with Royal Project caviar. This is followed by a foie gras parfait accented with Lanna larb spices, sweet preserves, and brioche. A reinterpretation of Mulligatawny velouté blends Mae Ta sweet potato, coconut foam, and Chiang Mai Sai Oua, referencing flavours that travelled through historic colonial trade routes.

A rhubarb and gin sorbet refreshes the palate before a contemporary take on British fish and chips, featuring seasonal fish coated in Hinlay curry spice batter, fermented crab tartar, and crisp Khao Fean fries.
The main course centres on a Mayura chocolate-fed Wagyu tenderloin, served with Makwan pepper jus, Parsi-style edible charcoal, and root-vegetable purées, reflecting a balance between local produce and classic European presentation. Dessert highlights San Kamphaeng figs paired with wild-honey yoghurt parfait, ginger crumble, blackberry gelato, Akha sumac tuile, and a warm honey-bourbon sauce poured tableside. The experience concludes with petit fours of pandan coconut praline and Darjeeling tea shortbread.

Served in the private dining room of the 1921 House, the Colonial Dining Experience is designed as a progression of flavours, atmosphere, and historical reference. Optional beverage pairings include selected wines from Spain, New Zealand, and Italy, along with cocktails inspired by regional botanicals that complement the menu’s global influences.
The Colonial Dining Experience is priced at THB 4,590++ per person for the seven-course menu. An optional beverage pairing is available at THB 1,190++ per person.
