Zaya Indian & Persian Kitchen has announced the appointment of Chef Mahesh Dhami as its new Executive Chef, bringing over 14 years of diverse culinary experience across luxury hospitality, Indian fine dining, and contemporary gastronomy.

Chef Dhami is known for his strong command over regional Indian cuisines, innovative menu design, and refined presentation techniques. In his new role, he will oversee all culinary operations at the restaurant, including menu innovation, kitchen management, team development, quality standards, and overall guest dining experience.

Prior to this appointment, Chef Dhami was associated with Musaafer by Spice Route, a Michelin-recognised Indian fine dining destination in the United States, celebrated for its progressive interpretation of Indian cuisine. During his tenure, he advanced from Junior Sous Chef to Sous Chef within a year, earning recognition for his leadership and operational excellence.

He began his professional journey with training at The Taj Mahal Hotel under the prestigious Hotel Operations Management Training (HOMT) programme. He further honed his culinary skills at acclaimed restaurants such as Masala Art and Machan, gaining exposure to luxury dining, banquet operations, and authentic Indian cuisine.

Chef Dhami specialises in Awadhi, Mughlai, Rajasthani, and South Indian cuisines, blending traditional flavours with modern culinary techniques, tasting menu concepts, and artistic plating. His core expertise spans menu engineering, food costing, team mentorship, and luxury dining operations.

Speaking on his appointment, Chef Dhami said,“I am honored to join Zaya Indian & Persian Kitchen and lead a concept that values authenticity and innovation. My goal is to create memorable dining experiences that celebrate the richness of Indian cuisine through modern techniques and thoughtful presentation.”

With Chef Dhami at the helm of its culinary vision, Zaya Indian & Persian Kitchen aims to further strengthen its positioning as an emerging destination for elevated Indian and Persian dining in South Texas.
