Waldorf Astoria Shanghai Qiantan Expands Its Dining Portfolio with Curated Culinary Experiences

The newly opened Waldorf Astoria Shanghai Qiantan signifies a fresh chapter for both the brand and the riverside Qiantan area. As this part of Pudong transforms into a vibrant lifestyle and commercial centre, the hotel features a dining selection that showcases Waldorf Astoria’s culinary legacy while connecting with Shanghai’s changing food scene. Combining regional flavours with international methods, the hotel enriches the city’s luxury dining options.

The hotel features two restaurants: the brand’s signature Peacock Alley and an intimate chef’s table concept. Together, these venues showcase local ingredients, global culinary influences, and spaces designed for both social and destination dining.

ARAME: Contemporary European Cuisine with Local Sourcing

Located on the ground floor, ARAME takes its name from a type of seaweed and focuses on contemporary European cooking, emphasising seasonal, locally sourced ingredients. The menu features produce such as calamari from Dongshan, Fujian, and sweet shrimp and sea urchin from Dalian, Liaoning. The residential-style interior and terrace seating support all-day dining, including extended brunch service until mid-afternoon.

Signature dishes include Blue Lobster cooked over charcoal, paired with a marinated pig ear terrine, ají peppers, crispy rice cakes, and a Taizhou red prawn broth reduction. The Wellington Potato layers potatoes, Manchego cheese, and bacon in pastry, served with a mushroom sauce infused with black truffle. Grilled Calamari is prepared with fermented chilli, Yunnan tree tomato reduction, and herbs. A wood-fired grill using lychee wood underlines the restaurant’s focus on clarity of flavour.

Fu Cheng: A Modern Interpretation of Min Cuisine

Located on the hotel’s top floor, Fu Cheng is led by chef Justin Yang, known for his contemporary interpretations of Fujian cuisine. The restaurant draws on Quanzhou traditions, with ingredients sourced from Fujian and other regions.

Key dishes include Deep-fried Eel with Finger Lime, prepared using a 36-hour air-drying process before frying and glazing with honey and citrus notes. Braised Beef Steak is simmered with curry and satay spices, referencing Southeast Asian influences shaped by maritime trade routes. Double Boiled Duck Soup with Sandworm combines Fujian duck and dried sandworms, simmered to produce a layered broth.

Fu Cheng also offers a tea-pairing program guided by trained tea sommeliers, featuring selections such as Fujian Yancha and Yunnan Pu’er to complement individual dishes. The interior design blends contemporary lines with references to traditional Shanghai architecture, while river views and terrace seating frame the dining experience.

Peacock Alley: A Social Space from Day to Evening

Peacock Alley at Waldorf Astoria Shanghai Qiantan continues the brand’s long-standing concept of a central social lounge. Inspired by the original Peacock Alley in New York, the space offers afternoon tea with Western pastries and regional ingredients such as kumquats and Chinese walnuts. As the day transitions into evening, the venue transforms into a lounge, combining river views with a relaxed atmosphere ideal for informal gatherings.

Starlight: A Chef’s Table Experience

Starlight offers a private chef’s table format designed for small groups seeking a focused dining experience. Guests interact directly with resident or guest chefs as dishes are prepared in an open kitchen, with menus shaped by seasonality and technique. A private terrace offers views of the Huangpu River and the West Bund, enhancing the overall dining setting.
