Sofitel Legend Metropole Hanoi Hosts ‘Rendez-vous’ Dining Series
Michelin-starred Chef Thibault Sombardier joins Le Beaulieu

Le Beaulieu, the French fine dining restaurant at Sofitel Legend Metropole Hanoi, is bringing back its ‘Rendez-vous’ dining series with a four-hands dinner featuring Chef Thibault Sombardier.

Chef Thibault, known for his work at Restaurant Anne in Paris, will collaborate with Executive Chef Matthieu Pirola and Le Beaulieu’s Chef de Cuisine Charles Degrendele for two evenings on 27 and 28 March. Together, they will present a six-course menu focused on French culinary techniques with a contemporary approach and seasonal ingredients.
Collaborative menu and dining experience

The menu reflects a shared approach to French cuisine, combining classical methods with modern elements. The ‘Rendez-vous’ series is designed to bring guest chefs together with the in-house team to create curated dining experiences for guests.
The dinner is priced at VND 4,900,000++ per person, with an option for wine pairing at VND 7,200,000++. Discounts are available for ALL Accor+ Explorer members. Seating is limited; reservations are required in advance.

Le Beaulieu has been part of the Hanoi dining scene for over a century, serving a mix of traditional French dishes and contemporary interpretations. The restaurant continues to evolve its menu, including recent tasting experiences inspired by regional Vietnamese ingredients.
