Courtyard by Marriott Mumbai International Airport Appoints Rohin Thankappan as Executive Chef

Courtyard by Marriott Mumbai International Airport has appointed Rohin Thankappan as Executive Chef.

Courtyard by Marriott Mumbai International Airport is now an ISO 14001:2015  Certified for Environmental Management

 

Rohin brings over 18 years of experience in the hospitality industry across India and international markets. In his new role, he will oversee the hotel’s culinary operations, including restaurants, banqueting, and in-room dining.

His responsibilities will include menu development, kitchen operations, and maintaining consistency across food and beverage offerings. He will also focus on team development and operational processes within the culinary division.

Prior to this appointment, Rohin has worked across business hotels and resort destinations, leading culinary teams and contributing to various dining formats. His experience includes participation in international culinary events and collaborations.

Rohin follows a culinary approach centred on ingredient-led cooking, combining classical techniques with contemporary practices. His areas of focus include seasonal ingredients, regional influences, and sustainable kitchen practices such as responsible sourcing and waste reduction.

In addition to operations, he is expected to work on strengthening culinary standards and supporting the overall food and beverage positioning of the hotel.
