Sugar Beach, A Viceroy Resort Appoints Simon Winchester as Resort Manager

Sugar Beach, A Viceroy Resort has appointed Simon Winchester as Resort Manager. He succeeds to the role after previously serving as Executive Assistant Manager of Food & Beverage at the property.

Simon joined the resort in 2020 and has since overseen its food and beverage operations, managing multiple dining venues, private dining experiences, retail concepts, and in-villa culinary services. During his tenure, he was involved in the development and management of the resort’s culinary and beverage programmes. One of the resort’s restaurants, Saltwood, received a Wine Spectator Restaurant Award during this period.

Simon brings more than 20 years of international experience in food and beverage operations, having worked across hospitality properties in various markets. His career has focused on culinary programme development, operations management, and team leadership.

In his new role, Simon will oversee the resort’s day-to-day operations and work with the leadership team on guest experience, operational processes, and overall property management.
