Art of Bar Concept Brings Cocktail and Food Pairing Together
MGallery Collection has partnered with chef Pichaya Soontornyanakij to introduce a new bar concept centred on cocktails and food pairing. The initiative will be presented during World Cocktail Month 2026 across selected properties worldwide.
The collaboration focuses on pairing cocktails with curated bites, bringing together flavours, textures and aromas to create a combined dining-and-bar experience. Rather than treating drinks and food separately, the concept aims to present them as part of a shared experience.

The programme will be introduced across 16 MGallery Collection hotels in Europe, Asia, Australia, the Americas, and the Middle East. Each location will interpret the concept in line with its local setting while maintaining a consistent pairing approach.
Chef Pam, known for her work at Bangkok-based restaurant Potong, has developed a series of dishes designed to complement specific cocktails. These include items such as beef tartare with chilli crème and caviar, crab-based bites and squid dishes, all structured to balance flavour and texture alongside drinks.

In addition to a core set of dishes, the concept includes regional variations that reflect local ingredients and culinary influences. This approach allows each participating hotel to adapt the experience to its location while maintaining a common framework.

The Art of Bar initiative is part of MGallery Collection’s broader focus on developing food and beverage concepts that combine design, local identity and guest interaction within hotel spaces.
