Caravela Dining Concept Debuts at NH Collection Maldives Reethi Resort
NH Collection Maldives Reethi Resort has introduced Caravela, a new dining concept inspired by historic maritime trade routes and cultural exchange during the Age of Discovery.
Located in the UNESCO-protected Baa Atoll, the resort’s new dinner experience combines Spanish culinary influences with Maldivian ingredients through a themed multi-course tasting menu. The concept takes its name from the caravel, the sailing vessel widely used during European exploration between the 14th and 17th centuries.
Caravela is designed as a dinner-only experience for up to 12 guests, centred on a communal table. The NH Collection Maldives Reethi Resort launch menu, titled The Atlantic Voyage of 1487, follows the historical route taken by early explorers travelling from the Iberian Peninsula along the African coastline towards the Cape of Storms in search of a sea route to India.
The five-course tasting menu includes dishes featuring king crab fritters, Maldivian tuna loin, local job fish and slow-cooked pork belly, alongside desserts inspired by Portuguese and African culinary traditions. The experience concludes with petit fours referencing later voyages connected to the Americas.
Future editions of the concept are expected to explore other historical maritime journeys, including The Pacific Voyage of 1492 and The Indian Ocean Voyage of 1498, with new menus focusing on different regional flavours and ingredients.

The project was developed under the direction of Resort Manager Melroy Fernandes in collaboration with the resort’s culinary team. Fernandes, who is also a Master Sommelier, worked with the resort’s sommelier team to create wine pairings for the menu.
Speaking about the launch, Fernandes said the concept was created for travellers seeking experiences that combine food, culture and history with the Maldives’ natural setting.
Caravela joins the resort’s wider dining portfolio, which includes all-day dining venue Jumla, speciality restaurants Alifaan and Kaiyo, and several bar and destination dining experiences across the property.
The Atlantic Voyage tasting menu with wine pairing is priced at USD 190++ per guest and is available through advance reservation.
