Saif Shaikh Elevated to Assistant Director of Food & Beverage at Fairmont Mumbai and Roswyn, A Morgans Original Hotel

Fairmont Mumbai and Roswyn, A Morgans Originals Hotel, have elevated Saif Shaikh to the role of Assistant Director of Food & Beverage.

Saif Shaikh has been part of the hotel’s leadership team and has been involved in managing food and beverage operations across restaurants, bars, banquets, and other dining formats at the property.

Saif has over 11 years of experience in the hospitality sector, with prior roles at brands including Fairmont, Ennismore, Hilton Garden Inn, JW Marriott, Grand Hyatt, and Sofitel.

He holds extensive expertise in managing multi-outlet operations, overseeing teams, and working on revenue and operational processes within food and beverage departments.

Priot to this appointment, Saif was associated with JW Marriott Pune as Director of Restaurants & Bars, where he oversaw multiple dining outlets and was involved in the launch of a Sichuan restaurant concept. He has also worked with Grand Hyatt Mumbai, where he managed restaurant operations.

In his new role, Saif will oversee food and beverage operations across both Fairmont Mumbai and Roswyn, including restaurants, bars, banquets, in-room dining, and events. His responsibilities will include operational management, coordination across teams, and supporting revenue and service delivery objectives.
