Taj Wayanad Resort & Spa Kerala Appoints Subin Mecheri as Executive Chef

Taj Wayanad Resort & Spa Kerala, part of The Indian Hotels Company Limited (IHCL), has appointed Subin Mecheri as Executive Chef.
In his new role, Mecheri will lead the resort’s culinary operations, oversee menu planning, and support food and beverage initiatives across the property.

Mecheri brings extensive experience in the hospitality industry, with a background in kitchen leadership, culinary operations, and team management. Prior to this appointment, he served as Executive Chef at Taj Kumarakom Resort & Spa, Kerala.
He has also worked with Accor, where he held Executive Chef roles at Novotel Chennai SIPCOT and ibis Kochi City Centre. Earlier in his career, he served as Corporate Executive Chef at Imperial Kitchen & Cafe Alchemy and held leadership positions with ITC Hotels and Edassery Group of Hotels.
With experience across multiple hospitality brands and markets, Mecheri has developed expertise in culinary operations, menu development, and team leadership.
His appointment reflects the resort’s focus on strengthening its culinary team and enhancing food and beverage offerings.
