Italian cuisine, recognised by UNESCO as an Intangible Cultural Heritage of Humanity, reflects regional identity, tradition and craftsmanship. Across its properties in Italy, Minor Hotels presents a series of dining experiences that interpret local culinary heritage through contemporary approaches.

From Venice to the Amalfi Coast, each destination highlights a distinct regional identity shaped by local ingredients, history and culinary technique.

Venice

At Da Lorenzo – Al Giardino Segreto by Paulo Airaudo, located within NH Collection Venezia Grand Hotel Palazzo dei Dogi, the dining concept centres on contemporary Italian cuisine with international influences. Led by Michelin-starred Chef Paulo Airaudo and featured in the MICHELIN Guide, the restaurant is set within a 17th-century palace overlooking a historic private garden. The tasting menus reinterpret Venetian traditions with a focus on seasonality and technique.

Florence

In Florence, Terrae Restaurant at Tivoli Palazzo Gaddi Firenze Hotel presents a fine dining programme guided by Michelin-starred Chef Patronne Iside De Cesare and Resident Chef Salvatore Canargiu. The menu evolves with the seasons and highlights Tuscan ingredients, with fresh pasta serving as a central element of the culinary philosophy.

Rome

On Piazza della Repubblica, INEO Restaurant at Anantara Palazzo Naiadi Rome Hotel holds one MICHELIN star. Executive Chef Heros De Agostinis describes the cuisine as a dialogue between Italian foundations and global influences. With 22 seats, the restaurant offers tasting menus and à la carte selections in an intimate setting.

At NH Collection Roma Fori Imperiali (Minor Hotes), Oro Bistrot Restaurant by Natale Giunta presents Italian cuisine with seasonal ingredients, set on a rooftop overlooking the Monumento a Vittorio Emanuele II and the Roman Forum.

Also in Rome’s Prati district, Antéla Restaurant at NH Collection Roma Centro combines gastronomy and mixology in a garden setting, offering seafood, contemporary dishes and a curated wine and cocktail programme.

Amalfi Coast

On the Amalfi Coast, Dei Cappuccini at Anantara Convento di Amalfi Grand Hotel is located within a restored 13th-century Capuchin convent overlooking the Tyrrhenian Sea. The restaurant focuses on southern Italian flavours and locally sourced ingredients, presenting traditional Amalfitan recipes with modern interpretation.

Through these destinations, Minor Hotels integrates regional Italian culinary traditions with contemporary hospitality settings, offering guests a range of dining experiences shaped by place and heritage.
