Anise, Taj Coromandel to Mark Republic Day with Pan-Indian Culinary Showcase
Anise, the all-day dining restaurant at Taj Coromandel, Chennai, is set to commemorate Republic Day with a specially curated Pan-Indian dining experience on 26 January. The one-day culinary showcase is designed to reflect India’s regional diversity through a menu that brings together flavours and cooking traditions from across the country.

The experience will begin with a selection of non-alcoholic beverages inspired by regional ingredients, including saffron lassi shooters, jaljeera mojito, guava-mint fizz, kokam mule and a mango-passion mocktail. The spread will also feature a variety of salads such as masala peanut sundal, carrot kosambari, Punjabi lachha onion salad and roasted sweet potatoes with balsamic-marinated fruits, alongside a dedicated cheese station.
Live counters will add an interactive element to the meal, with offerings such as a tricolour pani poori experience at the chaat station, a Goan rasa omelette counter, and a kebab selection that includes kothmir paneer tikka, methi aur corn seekh, prawn sukka and gosht shikampuri.
The main course will showcase dishes from different regions of India, including Rajasthani paneer masala, Punjabi chole pindi, mutton chettinad, Bengali fish curry, Kashmiri mutton yakhni pulao and Thalasseri chicken biryani. These will be accompanied by freshly prepared Kerala parathas, naans and rotis. The meal will conclude with an assortment of desserts featuring the chef’s signature preparations.
The Republic Day feast at Anise aims to offer guests a culinary journey that highlights India’s diverse food traditions in a single dining experience.
