Hôtel Palais de la Méditerranée Joins The Unbound Collection by Hyatt

Hôtel Palais de la Méditerranée Begins a New Chapter on the French Riviera
Hyatt Hotels Corporation has announced the addition of Hôtel Palais de la Méditerranée in Nice to The Unbound Collection by Hyatt portfolio. Located on the Promenade des Anglais, the hotel combines its Art Deco heritage with contemporary interiors and hospitality experiences inspired by the Mediterranean coast.
Overlooking the Baie des Anges and situated close to Vieux-Nice, Place Masséna and the Cours Saleya markets, the property has been part of the city’s landscape since 1929. Originally opened when the French Riviera attracted travellers from across Europe and beyond, the hotel has now been renovated for a new generation of visitors.
The property is part of The Unbound Collection by Hyatt, a portfolio of independent hotels known for their individual character and connection to local culture. Other hotels within the collection include Hôtel du Louvre in Paris and The Georgian in Santa Monica, California.

Behind its historic façade, designed by architects Charles and Marcel Dalmas and protected as a historic monument, the hotel has undergone an extensive redesign led by interior designer Linda Boronkay. Drawing on both the region’s history and natural surroundings, the redesign introduces soft colour palettes, curved forms and materials inspired by the Mediterranean environment.
The hotel features 173 guestrooms, including 28 suites, many of which are designed to maximise natural light and views of the sea and the city. The interiors aim to create a connection between the Riviera landscape and the guest experience.
Dining is centred on Zouzou Restaurant, where Executive Chef Sébastien Roux presents a Mediterranean-inspired menu featuring seasonal ingredients and locally sourced produce. Located on the third floor, the restaurant overlooks the sea and reflects the region’s relaxed dining culture.
Guests can also enjoy the rooftop terrace, which offers views across the Baie des Anges and the Mediterranean coastline. The space serves as a venue for drinks and informal gatherings throughout the day and evening.
The hotel’s leisure facilities include both indoor and outdoor swimming pools, a fitness centre, sauna and steam bath. These amenities have been designed to complement the slower pace of life often associated with the Côte d’Azur.
For meetings and events, Hôtel Palais de la Méditerranée offers more than 18,000 square feet of event space. Its largest venue, Salon Riviera, can accommodate up to 936 guests in a theatre-style layout. The event facilities are intended for conferences, corporate functions, private celebrations and cultural events.
According to General Manager Julien Renetaud, the project focused on preserving the building’s historic identity while adapting it to contemporary hospitality needs. The hotel’s location on the Promenade des Anglais places guests within easy reach of many of Nice’s cultural and leisure attractions.
The opening of the Hôtel Palais de la Méditerranée also comes as The Unbound Collection by Hyatt marks its tenth anniversary in 2026. The addition of Hôtel Palais de la Méditerranée reflects Hyatt’s continued expansion of its luxury and lifestyle hotel portfolio across key international destinations.
