Fairmont Cheshire Opens with Golf, Spa and Dining Experiences

Fairmont Hotels & Resorts, part of the Accor group, has opened Fairmont Cheshire, The Mere, marking the brand’s fourth property in the UK. Located in the Cheshire countryside near Knutsford, the hotel combines heritage with contemporary hospitality following an extensive redevelopment.

The property features 116 guestrooms, including 23 suites, alongside a championship golf course, wellness facilities, meeting spaces and a range of dining options.

A New Addition to Fairmont’s UK Portfolio

Set across 157 acres overlooking The Mere Lake, the hotel has been designed by Bergman Design House, with interiors inspired by the surrounding landscape and the region’s heritage. Guests also have convenient access to nearby destinations, including Knutsford, Manchester and the Peak District.

Dining Led by Gordon Ramsay

Dining is a central part of the guest experience at The Mere, where Gordon Ramsay serves British-inspired cuisine made with seasonal ingredients. Signature dishes include the chef’s well-known Beef Wellington.

The hotel also features The Orangery, which serves afternoon tea during the day and transforms into a champagne and oyster bar in the evening. The Club Lounge offers a menu that combines international dishes with Indian-inspired cuisine.

Wellness and Golf Facilities

The Fairmont Spa, located within a restored Victorian stable block, includes a 20-metre indoor swimming pool, Finnish sauna, hammam, salt inhalation chambers, ice baths and six treatment rooms. Wellness programmes are offered in partnership with Wildsmith Skin, KAMA Ayurveda and 111Skin.

Golf enthusiasts can enjoy the property’s 18-hole championship course, originally designed by James Braid and George Duncan, which remains one of the resort’s key attractions.

Venue for Meetings and Celebrations

The hotel also caters to business events and private celebrations with a 1,000-square-metre Grand Ballroom that can host up to 1,000 guests. Additional meeting rooms and event spaces are available for conferences, weddings and private gatherings.

The opening strengthens Fairmont’s presence in the UK while adding another countryside destination to the brand’s global portfolio.
