Four Seasons Hotel Shenzhen Appoints James Hu as Executive Chinese Chef

Four Seasons Hotel Shenzhen has announced the appointment of James Hu as Executive Chinese Chef. He will lead the culinary direction of Zhuo Yue Xuan, the hotel’s Cantonese dining venue.
Chef Hu brings over two decades of experience in Chinese cuisine, with a focus on Cantonese culinary traditions. Born in Guangdong, he began his culinary journey at the age of 16 and trained at Liyuan Restaurant, where he developed a strong foundation in Cantonese cooking techniques.
Over the years, he has worked with established dining establishments including Xin Rong Ji, Jing Cai Xuan, and Saai Yue Heen. Prior to this role, he served as Executive Chinese Chef at Summer Palace, a Michelin-recommended Cantonese restaurant.
In his new role, Chef Hu will oversee menu development, kitchen operations, and culinary standards at Zhuo Yue Xuan. His approach focuses on ingredient quality, precise technique, and consistency in preparation and presentation. He is known for a detail-oriented style, ensuring that each dish reflects balance, seasonality, and authenticity.
Chef Hu also draws inspiration from regional produce and culinary traditions across China, incorporating these influences into a contemporary Cantonese dining experience.
“It’s an honour to join the team at Four Seasons Hotel Shenzhen and usher in a new chapter at Zhuo Yue Xuan,” says Chef Hu. “I look forward to crafting culinary experiences that honour the restaurant’s legacy while evolving our approach to ingredients, technique and presentation.”
