Fairmont Udaipur Palace has announced the appointment of Amitesh Virdi as Director of Culinary.

With over 24 years of experience across leading hospitality brands, Amitesh brings extensive expertise in Indian and international cuisines, as well as a passion for creating immersive dining experiences.
Amitesh began his career in the culinary field under the aegis of the Indian Tourism Ministry. Over the years, he has held leadership roles at Grand Hyatt Delhi and Mumbai, JW Marriott Juhu, Sahar, Mussoorie and Pune, Le Méridien Delhi, and Punjab Grill, where he served as Executive Chef.

His culinary proficiency spans across global cuisines such as Indian, European, Italian, and Sichuan, which is shaped through years of experience with many award-winning properties.
At Fairmont Udaipur Palace, Amitesh will lead the hotel’s culinary strategy and operations. He will also introduce menus that celebrate Rajasthan’s traditional heritage by incorporating modern techniques and sustainability practices with it. His approach emphasises local sourcing, farm-to-table concepts, and wellness-oriented dining.
Under his leadership, the hotel’s dining venues—including Bahaar – The Gastronomical Garden, Dastaan, The Alchemist, Celeste, and Dahaad—will offer curated culinary concepts. He is also introducing innovative elements such as live cooking stations, storytelling-driven menus, and signature concepts like the 56-dish Royal Thaal for weddings and events.
