APPOINTMENT
Vivian Mercado has been appointed as the Head Chef at Rancho La Puerta, North America’s original fitness resort and spa.
In this role, she will oversee the culinary direction of La Cocina Que Canta, the resort’s well-known cooking school, while supporting the broader culinary vision of the property.
Mercado graduated from the Culinary School at the University of Baja California (UABC) in Ensenada. Her early career involved working across the region’s varied culinary landscape, including artisanal kitchens, wine country projects, and roles focused on specialty coffee and bread-making.
Vivian initially joined Rancho La Puerta as part of the Tierra Alegre Juice Bar team and later advanced to sous chef. Her steady growth within the organization has now led her to head La Cocina Que Canta. Her culinary style reflects Baja’s local ingredients and emphasizes seasonal, nourishment-focused cooking.
As Head Chef, Mercado will guide menu development, lead the team at the cooking school, and help further strengthen Rancho La Puerta’s commitment to connecting food, wellness, and community.
