Fairmont Udaipur Palace Strengthens Leadership Team with Three Key Appointments

Fairmont Udaipur Palace has announced the appointment of Keith Rajan as Hotel Manager, Anirban Sarkar as Director of Food & Beverage, and Sumit Pawariya as Assistant Director of Food & Beverage.

These appointments bring together extensive operational expertise and leadership experience across key functions, further strengthening the hotel’s executive team.

Keith Rajan- Appointed as Hotel Manager

Keith Rajan brings over two decades of global hospitality experience, including more than ten years with the Shangri-La Group across Southeast Asia and the Middle East. Most recently, he was part of the leadership team at Shangri-La Bangkok, where he focused on operational performance and guest service delivery.

His career also includes leadership roles with The St. Regis Mumbai and Four Seasons Hotel Mumbai, contributing to his experience in luxury hospitality. With a background in food and beverage, he is recognised for team development and operational efficiency. In his current role, he will oversee overall hotel operations with a focus on service standards and guest experience.

Anirban Sarkar- Appointed as Director of Food & Beverage

Anirban Sarkar brings over 17 years of experience in food and beverage operations. His expertise spans operational strategy, revenue management, planning, and guest engagement. He was recognised as F&B Person of the Year in 2025.

He has previously worked across multiple properties within Hyatt Hotels Corporation in India, gaining experience across diverse dining concepts and operations. In his new role, he will lead the hotel’s food and beverage division, focusing on enhancing culinary offerings and overall dining experiences.

Sumit Pawariya- Appointed as Assistant Director of Food & Beverage

Sumit Pawariya brings experience in managing large-scale food and beverage operations, with a focus on driving revenue performance, operational efficiency, and guest satisfaction. His leadership approach combines analytical planning with team development.

In his role as Assistant Director of Food & Beverage, he will support the execution of operational strategies, enhance service delivery, and contribute to the growth of the hotel’s F&B offerings.
