Emirates Expands Caviar Service with Refined First Class Ritual

From Persia to Poland, Emirates selects and serves Ossetra caviar for its First Class customers. With guests invited to enjoy unlimited amounts of the delicacy onboard, the airline has recorded an increase of more than 30% in caviar consumption year on year. Routes with the highest levels of caviar enjoyment include flights between Dubai and London, followed by Paris, Sydney, Moscow, and Bangkok.

To mark the delicacy’s cultural and culinary significance, Emirates has developed a dedicated caviar service ritual. The crew present the dish with white gloves, sets a fresh linen cloth on the table, and arranges accompaniments such as melba toast, blinis, egg yolk, egg white, chives, onions, sour cream, and lemon. The experience is paired with Dom Pérignon champagne, served exclusively onboard Emirates, with its acidity and minerality complementing the caviar’s briny and creamy profile. A mother-of-pearl spoon is used to preserve taste, while caviar is presented in an engraved bowl.

Emirates serves caviar from the Siberian sturgeon (Acipenser baerii), a species known for its adaptability to aquaculture and relatively faster maturation, producing roe between 5 and 7 years of age. Medium-sized with shades of dark grey to brown or black, this caviar offers a clean taste and delicate texture. The species is native to river systems flowing into the Arctic Ocean, including the Ob, Lena, and Yenisei rivers in Siberia, and plays a vital role in the aquaculture-based caviar industry.

To meet the needs of its First Class operations, Emirates coordinates a detailed supply chain. The caviar is rinsed, salted, chilled, vacuum packed, pasteurized, and delivered to Emirates’ catering facility in Dubai. It is transported under controlled temperatures, with dedicated vehicles ensuring standards are maintained from the supplier to the aircraft. Across Emirates’ destinations, catering partners receive caviar directly from the same source to maintain consistency.
