Number One at The Balmoral Appoints John Munro as Head Chef

Number One at The Balmoral has appointed John Munro as Head Chef, marking a new phase for the Edinburgh-based restaurant.

Munro has been associated with the restaurant since 2022, most recently serving as Senior Sous Chef, where he contributed to the culinary direction alongside Executive Chef Paul Hart. In his new role, he will lead the kitchen, focusing on menu development and overall culinary operations.

His culinary approach is centred on seasonal, ingredient-led cooking, with an emphasis on local sourcing and sustainability. His experience includes roles at Timberyard, The Black Swan at Oldstead, The Gannet East, and The Little Chartroom, where he developed his expertise in contemporary cuisine.
Munro has also been involved in initiatives that connect the restaurant to its natural surroundings, including the introduction of an on-site beehive and the use of foraged ingredients sourced from Edinburgh and the East Lothian coastline.
In his new role at The Balmoral, he will continue to develop menus that highlight regional produce and supplier relationships, with a focus on seasonality and provenance.
His appointment follows his selection for the Scottish Culinary Team for the 2026 Culinary World Cup and reflects his ongoing involvement in the culinary community.
The appointment is part of the restaurant’s continued focus on evolving its culinary offering while maintaining its core identity.
