APPOINTMENT
The Pavilions Phuket has announced the appointment of Arnaud Violtat as the new Executive Chef.

Chef Arnaud brings extensive experience having worked across in Michelin-starred kitchens to deliver elevated dining experiences across the resort’s Firefly Pool & Restaurant, 360° Bar and signature ALTO Restaurant.
As a Michelin trained chef, with over 35 years of culinary experience, Chef Arnaud experience spans across Europe- including at France’s three Michelin star Le Coq Hardy, and one Michelin star Hotel Barrière Le Majestic, Cannes – the United States and Australia.
Now as the newly appointed Executive Chef, he will be responsible for overseeing all culinary operations across the resort’s Firefly Pool & Restaurant, 360° Bar, and signature ALTO Restaurant.
He will develop menus that emphasize seasonal and locally sourced ingredients, leads and supports the culinary team, and ensures consistent standards of food quality, presentation, and safety.
He will also work in collaboration with the food and beverage teams to enhance the overall guest experience, while managing kitchen operations with a focus on efficiency, sustainability, and creativity.
