The chefs, whose restaurants collectively hold seven Michelin stars, will introduce new dining concepts for Waldorf Astoria Hotels & Resorts in central London.

The collaboration will bring Coreus and Café Boulud to the restored Admiralty Arch building, combining Clare Smyth’s approach to modern British cuisine with Daniel Boulud’s French culinary background.

Located in the former residence of the First Sea Lord, Coreus will highlight ingredients from coastal and regional suppliers across the United Kingdom. Smyth plans to develop menus featuring sustainably sourced seafood, meat from family farms, local oysters, and seasonal produce.

Smyth will also introduce her Whiskey & Seaweed bar concept to the property, offering a selection of whiskies from UK distilleries, along with cocktails and a curated wine list.

Café Boulud

Café Boulud marks Chef Boulud’s return to London. The all-day restaurant will offer breakfast, afternoon tea, and lunch and dinner menus based on dishes from his existing Café Boulud locations. The restaurant will be situated on the rooftop of Admiralty Arch with a south-facing terrace overlooking The Mall and nearby landmarks.
