Niyama Private Islands Maldives is introducing a world-first: a new tasting menu at its underwater restaurant, Subsix, featuring the fusion of Japanese-Peruvian haute cuisine.

Subsix, named for its location half a kilometre out to sea and six meters below the surface, has provided unique experiences over the past decade, ranging from champagne breakfasts to midnight glow parties. Surrounded by a wall of glass and vibrant marine life, including sun-dappled corals, a variety of anemones and butterfly fish, and the occasional reef shark, every moment spent underwater feels magical—a truly once-in-a-lifetime experience.

Consistently innovating and pushing culinary boundaries, Subsix has now launched a new Nikkei tasting menu that matches the setting. This five-course menu combines Japanese tradition and precision with the boldness and artistry of Peruvian cuisine, showcasing the riches of the surrounding Indian Ocean through sustainably sourced ingredients presented in a modern, playful manner. Highlights include scallop ceviche, perfectly balancing tanginess and sea salt; wahoo tartare, caught by local fishermen and adorned with swirls of avocado and a hint of spice; and buttery cod that melts in your mouth, complemented perfectly by crisp asparagus. Guests can enhance their dining experience with a curated selection of sake or fine wines meticulously chosen by Head Sommelier Mayank Sharma.

Executive Chef Thierry Vergnault expertly crafted each dish. Trained in classical cuisine at the Four Seasons Hotel George V in Paris, Chef Thierry has expanded his culinary repertoire through positions around the globe.

“With a setting as extraordinary as Subsix, only an extraordinary menu will do,” says Chef Thierry.

“It is one that intrigues all five senses and excites the palate with every bite. As with all our restaurants, we take great pride in showcasing fresh, quality ingredients straight from the beautiful waters that surround us.”

Under Chef Thierry’s guidance, Niyama boasts nine restaurants and bars, including the newly relaunched Nest, which offers Asian cuisine in a treetop setting; Tribal, which focuses on culinary explorations of South America and Africa; and Indian Ocean Edge, which is situated on the water.

Subsix offers a five-course Nikkei tasting menu daily from 12:00 PM to 2:30 PM, priced at USD 250 nett per person.
