The Royal Livingstone Hotel by Anantara has launched two new dining experiences that spotlight local flavours while enabling travellers to enjoy the beauty of Zambia. The Gorge Picnic and Zambezi Dining Experience promise a feast for all the senses with cuisine and a connection to nature.

Gorge Picnic

Nestled amidst the scenery of the Batoka Gorge, the Gorge Picnic is a way to experience the area. Hosted at the limited-access Bobo Camp, guests are flown in by helicopter to a picnic spot overlooking the Zambezi River. Here, a picnic awaits, featuring locally sourced delicacies such as Zambezi River bream with ponzu dressing and beef boerewors in a jus of forgotten herbs. Guests can relax on blankets and cushions while savouring each bite, surrounded by gorge’s cliffs as the river flows by. This setting on a private beach is perfect for special celebrations or corporate events.

Zambezi Dining Experience

The Zambezi Dining Experience invites guests on a sunset journey where they can learn more about life and customs in Zambia and witness the sunset over the river. After meeting at reception, guests are escorted to the herb garden for an introduction to Zambian farming and gardening techniques. They will enjoy their first course of tomato jelly with cured local river bream with a chikanda carpaccio and Zambian okra salad, highlighting local ingredients. Guests are then transported by golf buggy to the riverbank, where their private chef awaits to serve Zambezi grilled bream with wilted spinach and tomato fondue. While the sun melts into the sky over the river, guests will be treated to stories about the river. River views await at the third stop, where guests hear more about farming in Zambia and the chef explains the traditional method used to cook the beef and nshima which is served and eaten without cutlery. The final site overlooks the Victoria Falls. As 500 million litres of water rushes over the cliffs, guests can sample assorted desserts such as cassava cake and Mubuyu mousse.
