Katie Johnson, Vice President and Global Brand Leader for Hyatt’s Independent Collection brands expressed, “Expanding The Unbound Collection by Hyatt brand with a second opening in Germany emphasizes our dedication to providing memorable experiences within our unique Independent Collection portfolio. This opening marks an important milestone on our journey, and we are thrilled that Brunfels Hotel will receive travellers this fall and beyond.”

Rooted in Tradition, Blossoming with Modernity

The hotel’s design combines modern style with retro elements inspired by Mainz’s traditions and contemporary vibe. Named after botanist Otto Brunfels, the hotel features modern artwork with botanical themes in its lighting, decor, and furnishings. The colours used—earthy greens, beige, and brown—create a comfortable and familiar atmosphere in line with the hotel’s natural style. New technology has also been incorporated into the hotel experience through climate control features that use air heat pumps and digital check-in for seamless entry.

Hotel Amenities

The Brunfels Hotel has community spaces with a retro vibe. One of its highlights is a hidden courtyard, which is covered and heated and has a bar. The hotel’s private dining room combines sophistication with natural elements, creating a unique atmosphere for meetings, dining, and private events. The central bar is the hotel’s heart, offering botanical-inspired signature cocktails and a menu of delicious dishes. The property collaborates with local producers such as craft brewer Kuehn Kunz Rosen, gin distillery Edelranz, and coffee roastery Müller.

The restaurant serves modern German cuisine, focusing on using local and regional produce that’s in season. Their wine selection highlights local producers, featuring well-known German winemakers and lesser-known labels. The hotel is proud of its German roots and global perspective. Guests can expect exceptional service and local recommendations from multilingual staff, who act as ambassadors for the property and the city.
