Since it opened in 2012, the InterContinental Danang Sun Peninsula Resort has improved Vietnam's restaurant scene by combining the country’s culinary heritage with international excellence. The resort, which has won many awards, is now entering a new phase of gastronomy by bringing in top chefs and introducing a new Japanese restaurant. This will further establish it as one of Asia’s top dining destinations.
Christian Le Squer Brings Fashion-Infused “Haute Couture” Cuisine to La Maison 1888
The jewel in InterContinental Danang’s culinary crown, La Maison 1888, is an elegant Indochine mansion woven into the hillside, overlooking the ocean. Having achieved a Michelin star in 2024, this celebrated restaurant welcomes Chef Christian Le Squer. An icon of French haute cuisine, Chef Christian has held three Michelin stars for 22 consecutive years and was named as global “Chef of the Year” in 2023. His culinary leadership and highly original, fashion-infused style will now transport diners on immersive journeys.
Chef Christian will work side-by-side with Florian Stein, La Maison 1888's Chef de Cuisine, who previously worked at the famous Le Chambard in France, and Jimmy Chang, the talented Beverage Manager and sommelier who has helped the restaurant achieve Wine Spectator's “Award of Excellence” for seven consecutive years.
Director of Culinary Bruno Bruesch to Create New Experiences
Bruno Bruesch, InterContinental Danang’s new Director of Culinary will guide the resort's gastronomic transformation. An epicurean expert with more than 30 years of experience across three continents, Chef Bruno was a rising young star in his home country of Switzerland. He captained his junior national team to a gold medal at the IKA/Culinary Olympics 1992. Since then, he has enjoyed a stellar career at leading five-star hotels and fine-dining restaurants in Europe, Asia and North America. His philosophy is based upon six key pillars: seasonality, sustainability, simplicity & playfulness, quality & excellence, continuous learning, and respect for tradition.
Chef Bruno is guided by these principles as he brings his passion, skill, and vision to InterContinental Danang's restaurants, bars, and banquets. This includes Citron, which offers authentic local and seasonal dishes from Vietnam's distinct northern, central, and southern regions, and Barefoot. This chic beachside grill extends onto the golden sand from a thatched wooden pavilion. Guests can also anticipate highly exclusive private dining opportunities, elevated gala events, and more surprises that have not yet been revealed!
Tingara to Raise Japanese Cuisine to the Stars
Tingara is a new Japanese omakase, teppanyaki, and sushi restaurant in Vietnam. It is set to open in late 2024 at the highest level of InterContinental Danang. The restaurant was designed by Bill Bensley to resemble a nest in the jungle canopy. It features a vibrant live kitchen and a robata grill and offers a choice of counter and table seating with panoramic ocean views. Guests can enjoy theatrical live cooking and multi-sensory menus.
Tingara comes from the Okinawan word for the Milky Way, which means "river of stars." Michelin-starred Chef Junichi Yoshida, teppanyaki expert Tetsuhiko Isozaki, and sushi master Tsuneyoshi Taira, all from Okinawa, will use only the finest ingredients, like fresh seafood and Kuroge wagyu beef.
“At InterContinental Danang, gastronomy has always been one of our key pillars as we strive to create extraordinary dining journeys that surprise and delight guests. By welcoming the world's most talented and innovative culinary pioneers, we push the boundaries further and create truly unparalleled experiences. We look forward to showcasing our exciting new menus to all discerning diners in the coming weeks and months,” said Seif Hamdy, General Manager, InterContinental Danang.
