DoubleTree's Latest Culinary Innovation
DoubleTree by Hilton has introduced a distinctive restaurant and bar concept named piebird, which is expected to launch in various locations throughout the United States later this year. Created by Hilton’s global in-house consultancy, StiR Creative Collective, piebird is inspired by Americana nostalgia and presents a contemporary take on American classics and unique pies, providing the warm feeling of a home-cooked meal for hotel guests and local patrons.
The first Piebird location will launch in fall 2025 at the DoubleTree by Hilton Hotel in Nanuet, New York. In early 2026, a second site will open at the DoubleTree by Hilton Hotel Asheville—Biltmore in Asheville, North Carolina, and more locations will follow.

StiR Creative Collective, Hilton’s food and beverage innovation team, transforms hotel dining for affiliated partners and independent hospitality venues across the Americas, Europe, the Middle East, and Africa (EMEA). Over the past two years, the collective has launched numerous cutting-edge projects, including Leonessa, an elegant aperitivo rooftop bar at Conrad New York Downtown; Ayda, an eclectic Mediterranean brasserie at Waldorf Astoria Cairo Heliopolis; five unique restaurant and bar concepts at Conrad Orlando (Ceiba, Sophia’s Trattoria, Papaya Club, Apero, Little Spoon); and several elevated dining experiences at Signia by Hilton Atlanta and Canopy by Hilton Toronto Yorkville.

Concept Inspiration
Piebird derives its name from the ceramic figurines designed to release steam from covered pies during baking, which aids in achieving a flaky crust and uniformly cooked filling. Piebird honours the tradition of American cooking, reflecting the ingenuity and creativity that spring from both the heart and the heartland.
Menu
Classic dishes will be infused with modern twists, presenting a well-rounded menu that caters to all tastes. Drawing inspiration from American diners, the breakfast includes options ranging from light fare to heartwarming, featuring the piebird Quiche and Monkey Bread French Toast. Lighter options such as the Knife and Fork Caesar salad and Tomato Jam Grilled Cheese are available for lunch and dinner. The menu also includes cherished classics like the signature Chicken Pot Pie, alongside highlights of regional American cuisines, such as Southern Comfort and Tex-Mex, with dishes like Biscuits and Gravy and the Southwest Cobb.
Desserts play a central role in the dining experience, showcasing hallmark pies that change with the seasons to emphasise fresh flavours. The signature piebird Pie, featuring a chocolate custard topped with chocolate malt balls, will remain a year-round menu favourite. The Cookie Martini, which pays tribute to the iconic DoubleTree chocolate chip cookie synonymous with the brand’s warm hospitality, will also be prominently featured. Additionally, Piebird will introduce a signature cocktail, the Piebird Palmer, alongside classic cocktails reinvented with fresh flavours, such as the Banana Daiquiri and the Mandarin Mango Margarita.
Design
Drawing inspiration from DoubleTree’s unique vibe, Piebird’s design evokes a cosy, relaxed atmosphere for connecting with loved ones. Warm, natural textures and a soothing colour palette will help visitors feel at ease and ready for a casual yet refined dining experience. Bright floral wallpaper adds character, complemented by selected vintage-inspired artwork and decor, creating a familiar home-like feeling for guests during their meal.
