Anantara Veli Maldives Resort has announced the return of its Around The World Michelin Star Guest Chef Series. The 2025 lineup promises dining experiences with a unique twist focused on sustainability.
This year, Michelin-starred guest chefs are required to incorporate sustainable practices into their menus. This may include utilizing local ingredients from the Chef’s Garden, adapting their offerings with the catch of the day, or creating a zero-waste menu.
Chef Francis commented, “Sustainability in the kitchen can be quite challenging in the Maldives due to the need to import most ingredients. However, we are fortunate to have a dedicated purchasing team that works with suppliers who share our sustainability goals.”
The series kicks off on February 27 with culinary power couple Chef Michelle Goh and Chef Pongcharn 'Top' Russell from Mia Restaurant Bangkok. They will bring a modern European twist with an Asian soul to the island.
On March 13, Chef Melvin Chou from Terra Tokyo Italian in Singapore will showcase a fusion of Japanese food culture and Italian cuisine. Known for emphasizing seasonal ingredients, Chef Melvin’s omakase menu creatively combines these two distinct culinary traditions.
Chef Oli Marlow, passionate about achieving zero waste while utilizing every part of an ingredient at Roganic Hong Kong, will visit Anantara Veli on April 17. Inspired by his mentor, Simon Rogan, he is working to build his legacy in the culinary world.
On May 22, Malaysian-born Chef Victor Liong from Lee Ho Fook in Melbourne will take over the kitchen with a Chinese-themed menu, followed by Chef Arnaud Dunand of Maison Dunand in Bangkok, who will present fine French cuisine on June 5.
Michael Parker, Complex General Manager of Anantara Veli Maldives Resort, expressed his anticipation for Chef Victor’s visit, stating, “I’ve lived in China for eight years, and the diversity of Chinese cuisine, influenced by various provinces, excites me. I hope some of Chef Victor’s creations will take me back in time.”
Representing British culinary talent, Chef Ricki Weston from The Dining Room at Whatley Manor in the UK will cook on July 24, followed by Chef Adam Smith of Woven by Adam Smith in Ascot on September 4.
Chef Simon Hulstone of the one-Michelin-starred Elephant in Torquay, UK, will return for the second year on October 30. Last year, he impressed guests with his squid risotto with cauliflower and Kerala curry sauce during a cooking class and beautifully cured seabass at dinner.
"I am looking forward to returning to Anantara Veli, especially with the focus on sustainability, which I am passionate about. Sharing my knowledge with the fantastic kitchen team while learning from them is incredibly rewarding. I also enjoy mingling with guests between courses, and I look forward to doing that again this year," Chef Simon remarked.
The series will conclude on December 4 with Chef Jeremy Gillon, known as the “vegetable whisperer,” who will return for the second time with a sustainable twist on his menu.
“The guest chef series not only enhances the resort’s extensive dining experiences for our guests but also provides valuable exposure for our chefs. Over the past two series, they have had the privilege of working with culinary greats from around the world, including Chef Dan Bark from Cadence in Bangkok and Chef Liam Nichols, who served as Richard Branson’s private chef,” Chef Francis stated.
